Neba Neba Soba - Chilled Soba with Fresh Okra & Black Sesame
Ingredients (Serves 2 - 3)
Vegetables & Garnishes:
4–5 fresh okra pods, thinly sliced
2 scallions (green onions), thinly sliced
Fresh ginger, finely grated
Black sesame seeds, for garnish
Soba: 200g buckwheat soba noodles
Broth: 2 cup dashi or soba broth (chilled)
Instructions
Prepare the Soba: Cook soba noodles according to package instructions. Drain, rinse under cold running water, and chill in ice water for 1–2 minutes. Drain well and set aside.
Prepare the Okra:Wash and thinly slice okra. For less slime, you can briefly blanch in boiling water for 20–30 seconds, then shock in ice water.
Prepare the Broth & Garnishes: Pour chilled soba broth into individual serving bowls. Add sliced scallions and a small amount of grated ginger to each bowl.
Assemble & Serve: Place chilled soba on a plate or in a shallow bowl. Arrange sliced okra on top. Sprinkle with black sesame seeds.
Serve each portion with the chilled soba broth on the side for dipping, or pour a small amount over the noodles if preferred.
