Mostly Banana Banana Bread 🍌
Extra-moist, naturally sweet banana bread with pronounced banana flavor. Gluten-free, slightly tropical, perfect for breakfast, snacks, or dessert.

Ingredients (Makes 1 loaf)

9–12 apple bananas (≈2–2.5 cups mashed)
1/3 cup melted coconut or olive oil
2 large eggs, beaten
1 tsp vanilla extract
1 tsp baking soda
½ tsp baking powder
Pinch of salt
1 cup gluten-free flour
1 cup dark rye flour
¼ cup chia seeds
¼ cup mochiko
Optional: ½ cup cacao nibs; macnuts and sliced bananas for garnish

Instructions
-Preheat Oven & Prepare Pan:
-Preheat oven to 350°F (175°C).
-Grease a 9x5-inch loaf pan or line with parchment paper.

Blend Wet Ingredients: In a food processor, blend apple bananas, eggs, vanilla, and oil until smooth. Scrape down sides as needed.

Combine Dry Ingredients: In a separate bowl, whisk together gluten-free flour, dark rye flour, chia seeds, mochiko, baking soda, baking powder, and salt.

Mix Batter: Gently fold dry ingredients into banana mixture until just combined.
Optional: fold in cacao nibs.

Bake:
-Pour batter into prepared loaf pan.
-Decorate with macnuts and sliced bananas if desired.
-Bake 50–60 minutes, until a toothpick comes out clean. Check at 50–55 minutes for doneness.
-Let cool in pan 10 minutes, then transfer to a wire rack.
